Low Carb Shrimp Veggie Casserole

I am still on my low carb diet and really enjoying it. Most of the time when I go on a diet, it doesn't last too long. However, with all of the great recipes out there, like this one, I am finding that I can stay on low carb.

Fried Green Tomatoes

When I was young, August always seemed to be the time for fried green tomatoes. Maybe because we had a big garden and my mother was tired of seeing red tomatoes or the fact that my father loved them.

Now here I am married to a man who loves fried green tomatoes too. He has to eat them all since I hate tomatoes.

I love vegetables, do you? However, sometimes I get stuck trying to get creative with veggies and making them healthy as well.
