Chicken and Smoked Sausage Paella

When Marilyn over at Marilyn's Treat posted this recipe I know I had to make it. Then last Saturday morning, I was reading the recipe and hubby said, what recipe are you looking at? When I told him it was paella, he said "what do you need, I am heading to the store to buy the ingredients".  He loves paella.

It is an easy recipe, you just need to chop up the chicken and the vegetables. It all goes into a slow cooker and let it do the rest.  The house smelled so wonderful. I didn't really change much but did add fresh thyme and parsley.

Every once in awhile, hubby actually looks at recipes. So he says, "we need to try Melting Potatoes". They taste like poutine. I think poutine is one of those dishes that you either like or you don't. We love it. Poutine is a dish that includes french fries and cheese curds topped with a brown gravy. It originated in the Canadian province of Quebec. When we are in Vermont, we always head to our favorite restaurant to get some poutine.

On Saturday, we headed off to the mushroom plant. You might remember that I told you, we have a mushroom plant near me and you can get these beautiful portobello mushrooms for cheap ( a paper bag filled to the top with about 20-23 mushrooms for $2).  We bought several bags,  since hubby takes them to our friends when he goes back to work. 
While we were there, the girl that checked us out told me that someone brought her some mushrooms that were stuffed as a burger.  I thought they sounded great so I looked online for recipes. I found a few but none really appealed to me so I took a little from one and some from another to make my own.

Coconut and Lime Pork

Are you trying to eat healthier? 

I am and I love to make food that is not only healthy but tastes great. I also like to put different meats into lettuce leaves. So when I saw this recipe, it was a no brainer.

Easy Chicken Stuffed with String Cheese

Here is a quick and easy meal that is sure to please everyone. Chicken and string cheese, how can you go wrong. I had great ideas about dinner last night, but one thing lead to another and before I knew it, my husband was home from work. I had two chicken breasts and it seemed like everything I wanted to make, I didn't have all the ingredients. I did have string cheese, so that's what I used.

Roasted Pork Loin with Pineapple Glaze

We had a few friends over last week and I wanted to make something special. I found this recipe from Marcela Valladolid who is on the Food Network channel. 

When I first saw this I was not sure about it, since I am not a big prune fan. My husband is so I knew he would love it. I like to make a recipe as is the first time but sometimes I know I need to modify it. Which was the case here.

Mexican Hot Dish

We love Mexican food and when it is easy, that makes it even better. This is a one pan meal. Dump everything into your pan and bake. I also like recipes that are versatile - add ingredients that you like. It is not spicy however.

Warm Up with Pasta e Fagioli

This has certainly been a crazy winter. I know everyone up north is waiting for spring. We have even felt the cold affects down here in Florida. Much cooler temps than usual. So as the temperature drops, it is great to warm up with some soup. I have always loved Olive Garden's Pasta e Fagioli soup and when I came across this recipe, I decided to try it. I don't know where it came from, I only have a photo copy.   It turned out great.

It is not hard to make, but you do have to chop a lot. You could cut this time down by buying already chopped vegetables, but that would cost more. Depends on how much time you have.

Sour Cream Chicken Enchiladas

Looking for a simple and fast dinner idea? These chicken enchiladas are easy to put together and taste great. If you use a roasted chicken, it goes together even faster. I like to make my own shredded chicken. I takes a little more time, but I love the flavor. I will share how I do this in another post. 

I did not put the onions in this batch, since my stomach doesn't like them. You can change up the cheeses to suit what you like, these make a great combo.

I divided the chicken mixture among 6 flour tortillas, that is all I had on hand. I placed them in the dish with the seam side down.

 Next I made the roux.

I added the sour cream and green chilies to the roux and poured it over the tortillas. Added the remaining cheese and baked it at 400 degrees for 20 minutes. Yummy!

Sour Cream Chicken Enchiladas

 

Ingredients:


1 lb shredded chicken breast(can used a roasted chicken)

1 medium onion, chopped

1 tablespoon vegetable oil

8 flour tortillas, softened (8 inches each)

1 1/2 cups grated monterey jack cheese or 1 1/2 cups Mexican blend cheese, divided

1/4 cup butter

1/4 cup flour

1 (15 ounce) can chicken broth

1 cup sour cream

1 (4 ounce) can chopped green chilies


Directions:


1. In frypan, cook onion in oil over medium-high heat until golden. Add shredded chicken and heat through.

2. Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.

3. Roll enchiladas and place seam-side down in 9x13" baking dish that has been lightly sprayed with non-stick cooking spray.

4. Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.

5. Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas.

6. Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.
